Lemon Garlic Salmon Tray Bake for the Nights You Need Dinner to Behave
What You’ll Need
- Salmon fillets
- Lemon
- Garlic
- Dijon mustard
- Olive oil
- Salt and pepper
- Asparagus
- Cherry or grape tomatoes
- Parmesan
- Fresh parsley, optional
- Extra lemon wedges, optional
- Crusty bread or toast, optional for serving
How to Make It
Make a lemon garlic paste by combining lemon zest, lemon juice, olive oil, Dijon mustard, grated garlic, salt and pepper.
Spread the paste over the top and sides of the salmon fillets. If you have time, let the salmon sit for a while so the flavour can settle in. If you do not have time, keep moving. The paste is bold enough to still do its job.
Place the asparagus and cherry tomatoes on a large oven tray. Toss them with olive oil, salt and pepper.
Make space for the salmon on the tray and place the fillets among the vegetables.
Cook under a hot grill or broiler until the salmon is just cooked through, the asparagus is tender, and the tomatoes are blistered and soft.
To serve, add a squeeze of lemon and a generous sprinkle of parmesan over the vegetables. Finish with parsley if you have it.
