Quick Pan-Seared Chicken Breast for Busy Weeknights
What You’ll Need
- Chicken breast
- Butter
- Plain flour
- Paprika
- Garlic powder
- Onion powder
- Cumin
- Salt and pepper
- Chicken stock or white wine
- Extra butter for the sauce
- Fresh parsley, optional
How to Make It
Slice the chicken breasts horizontally to create thinner pieces. This helps the chicken cook quickly and evenly.
In a small bowl, combine the flour, paprika, garlic powder, onion powder, cumin, salt and pepper.
Sprinkle the seasoning mixture over both sides of the chicken.
Heat butter in a large pan over high heat. Add the chicken and cook for around 2½ minutes on each side, or until golden on the outside and cooked through.
Remove the chicken from the pan and let it rest for a few minutes.
To make the sauce, add a splash of chicken stock or white wine to the same pan. Scrape up the golden bits from the bottom, then let it simmer briefly. Add the extra butter and stir until melted and glossy.
Spoon the sauce over the chicken and serve straight away.
